  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans, chopped
  • 1 cup light corn syrup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In another bowl, beat together the cream cheese, brown sugar, and vanilla until smooth.
  4. Add in the eggs one at a time, mixing thoroughly.
  5. Pour the cream cheese mixture over the crust.
  6. In a small saucepan, combine corn syrup and pecans; bring to a simmer.
  7. Pour the pecan mix on top of the cheesecake.
  8. Bake for 1 hour or until the center is set.
  9. Cool in the pan for at least 2 hours before refrigerating.
  10. Serve chilled and enjoy!
