2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
1 pound chicken thighs, boneless and skinless
1/2 cup hot honey
1 tablespoon cayenne pepper (optional)
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, mix flour, baking powder, and salt.
Add in cold butter and mix until the mixture resembles coarse crumbs.
Stir in buttermilk until just combined, then turn the dough onto a floured surface and knead gently.
Roll out the dough and cut into biscuits.
Place biscuits onto a baking sheet and bake for 15-20 minutes until golden.
In the meantime, cook chicken thighs in a skillet until crispy and fully cooked.
Once biscuits are baked, assemble by adding chicken and drizzling with hot honey.
Notes
For a spicier flavor, increase the amount of cayenne pepper.
