  • 2 acorn squashes
  • 1/4 cup honey
  • 1/2 cup goat cheese
  • 1/2 cup fresh cranberries
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Drizzle olive oil, salt, and pepper inside each half.
  4. Place the squash halves cut-side down on a baking sheet and roast for 25-30 minutes.
  5. In a small saucepan, combine cranberries with honey and cook over medium heat until the cranberries burst.
  6. Flip the squash and bake for an additional 10 minutes.
  7. Remove squash from the oven and let cool slightly.
  8. Fill each half with goat cheese and top with the cranberry drizzle before serving.
