Ingredients

  • 1 pound beef chuck, cut into cubes
  • 1 cup barley
  • 4 cups beef broth
  • 2 cups water
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the onions, garlic, carrots, and celery; sauté until softened.
  3. Stir in the barley, broth, water, thyme, and bay leaves.
  4. Bring to a boil, then reduce the heat and simmer for about 1 hour.
  5. Remove the bay leaves, season with salt and pepper, and serve.
