1 tablespoon olive oil
1 cup diced onion
2 cloves garlic, minced
3 carrots, sliced
3 stalks celery, sliced
1 teaspoon dried thyme
1 teaspoon dried parsley
8 cups chicken broth
2 cups shredded cooked chicken
1 cup egg noodles
salt to taste
pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat.
Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are tender.
Stir in the thyme and parsley.
Add the chicken broth and bring to a boil.
Once boiling, add the shredded chicken and egg noodles. Cook according to noodle package directions.
Season with salt and pepper to taste before serving.
