Ingredients

  • 1 pound boneless chicken thighs
  • 4 cups chicken broth
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup egg noodles

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery, and sauté until softened.
  3. Add minced garlic and spices, stirring for 1 minute.
  4. Pour in the chicken broth and water, bringing to a boil.
  5. Add chicken thighs and reduce to a simmer, cooking for 20-25 minutes.
  6. Remove chicken, shred it, and return it to the pot.
  7. Add egg noodles and cook until tender.
  8. Season with salt and pepper before serving.

  • This soup can be made in advance and reheated.
