  • 1 cup vegetable oil
  • 4 large eggs

  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the grated carrots, crushed pineapple, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs and mix well.
  4. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped walnuts if using.
  7. Pour the batter into a greased and floured cake pan.
  8. Bake for about 45-50 minutes or until a toothpick inserted in the center comes out clean.
