  • 3 ripe bananas
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, chopped
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mash the ripe bananas and mix in the sugar, melted butter, eggs, and vanilla extract.
  3. Stir in the crushed pineapple, shredded coconut, and chopped macadamia nuts.
  4. In a separate bowl, combine the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Pour the batter into a greased loaf pan and smooth the top.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before slicing.
