3 ripe bananas
1 cup crushed pineapple, drained
1/2 cup shredded coconut
1/2 cup chopped macadamia nuts
1/2 cup sugar
1/4 cup brown sugar
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, mash the bananas.
Add the crushed pineapple, shredded coconut, and chopped macadamia nuts to the mashed bananas and mix well.
In another bowl, cream together the sugar, brown sugar, and butter until light and fluffy.
Add the eggs and vanilla extract to the sugar mixture and mix until combined.
Gradually add the banana mixture to the sugar mixture.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Pour the batter into a greased loaf pan.
Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
