A delicious and healthy wrap featuring grilled zucchini, feta cheese, and chickpeas, topped with a herbed yogurt sauce.

Ingredients

  • 2 medium zucchinis
  • 1 cup chickpeas, cooked
  • 1/2 cup feta cheese, crumbled
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon juice
  • 4 whole wheat wraps
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Slice zucchinis lengthwise and brush with olive oil, garlic powder, salt, and pepper.
  3. Grill zucchini for about 4-5 minutes on each side until tender.
  4. In a bowl, mix Greek yogurt, lemon juice, oregano, salt, and pepper for the herbed yogurt.
  5. Assemble each wrap with grilled zucchini, chickpeas, feta cheese, and a dollop of herbed yogurt.
  6. Wrap tightly and enjoy!
