- 1 pound chicken thighs
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup orzo pasta
- 2 tablespoons fresh parsley, chopped
- In a large pot, heat olive oil over medium heat and sauté onions, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add chicken thighs, lemon juice, oregano, salt, and pepper. Reduce heat and let simmer until chicken is cooked through.
