  • 2 tablespoons olive oil
  • 4 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 teaspoons fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Sear short ribs on all sides until browned.
  3. Remove ribs and sauté onions until caramelized, about 15 minutes.
  4. Add garlic and cook for another minute.
  5. Deglaze the pot with red wine, scraping any brown bits from the bottom.
  6. Add beef broth, thyme, salt, and pepper. Return the short ribs to the pot.
