2 ripe bananas
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons melted butter
4 slices turkey bacon
Instructions
In a bowl, mash the bananas until smooth.
In a separate bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, and melted butter. Combine wet and dry ingredients and fold in mashed bananas.
Heat a skillet over medium heat and grease lightly. Pour batter onto the skillet, cooking until bubbles form. Flip and cook until golden brown.
Cook turkey bacon in the same skillet until crispy.
Serve pancakes with turkey bacon on the side.
