Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, whisk together the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fill the muffin cups 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let them cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
