  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • ¼ cup brewed espresso, cooled
  • ½ cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  4. Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract and cooled espresso.
  5. Pour the cheesecake batter over the crust in the springform pan.
  6. Bake in the preheated oven for 50-60 minutes or until the center is set.
  7. Remove from oven and let cool before refrigerating for at least 4 hours or overnight.

Notes

  • For a stronger coffee flavor, increase the amount of espresso.
  • Serve with a dollop of whipped cream on top.
