9 lasagne noodles
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 zucchini, diced
1 bell pepper, diced
1 cup mushrooms, sliced
2 cups spinach
1 jar (24 oz) marinara sauce
Instructions
Preheat oven to 375°F (190°C).
Cook the lasagne noodles according to package instructions.
In a skillet, heat olive oil over medium heat and sauté onions and garlic until fragrant.
Add zucchini, bell pepper, and mushrooms; cook until tender.
Stir in spinach until wilted, then remove from heat.
Spread a layer of marinara sauce at the bottom of a baking dish.
Layer 3 lasagne noodles, followed by half of the ricotta mixture, half of the sautéed vegetables, a layer of marinara sauce, and a layer of mozzarella cheese.
Repeat layers, finishing with noodles topped with marinara sauce, mozzarella, and Parmesan cheese.
Bake for 35-40 minutes or until bubbly and golden.
Allow to cool for 10 minutes before serving.
Notes
For extra flavor, add herbs like basil and oregano to the ricotta mixture.
This dish can be prepared a day in advance and stored in the refrigerator before baking.
