  • 9 lasagne noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 1 jar (24 oz) marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the lasagne noodles according to package instructions.
  3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until fragrant.
  4. Add zucchini, bell pepper, and mushrooms; cook until tender.
  5. Stir in spinach until wilted, then remove from heat.
  6. Spread a layer of marinara sauce at the bottom of a baking dish.
  7. Layer 3 lasagne noodles, followed by half of the ricotta mixture, half of the sautéed vegetables, a layer of marinara sauce, and a layer of mozzarella cheese.
  8. Repeat layers, finishing with noodles topped with marinara sauce, mozzarella, and Parmesan cheese.
  9. Bake for 35-40 minutes or until bubbly and golden.
  10. Allow to cool for 10 minutes before serving.

Notes

  • For extra flavor, add herbs like basil and oregano to the ricotta mixture.
  • This dish can be prepared a day in advance and stored in the refrigerator before baking.
