  • 1 pound ground beef
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 12 ounces lasagna noodles broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and add ground beef. Cook until browned.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Stir in crushed tomatoes and beef broth, bring to a boil.
  4. Add broken lasagna noodles and Italian seasoning, simmer until noodles are tender.
  5. In a separate bowl, mix ricotta cheese, Parmesan, and some salt and pepper.
  6. Stir the cheese mixture into the soup just before serving.
  7. Top with shredded mozzarella cheese and serve hot.
