- 1 pound ground beef
- 1 cup diced onion
- 2 cups enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- 1 tablespoon taco seasoning
- 1 can black olives, sliced
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef and diced onion until cooked through.
- Stir in the taco seasoning and half of the enchilada sauce.
- In each tortilla, add a spoonful of the beef mixture and some cheese, then roll them up.
- Place the rolled tortillas in a baking dish, seam side down.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese and olives.
