A quick and easy recipe for a hearty jambalaya that can be made in the crockpot with minimal effort.

Ingredients

  • 1 pound turkey bacon
  • 1 pound chicken thighs
  • 2 cups bell peppers, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 2 cups rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a crockpot, add the turkey bacon, chicken thighs, diced bell peppers, chopped onion, and minced garlic.
  2. Pour in the diced tomatoes and chicken broth.
  3. Add the rice, Cajun seasoning, salt, and black pepper.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Before serving, stir and check for consistency; add more broth if needed.

Notes

  • For added flavor, you can also include sliced sausage.
  • Adjust the spice level by adding more Cajun seasoning if desired.
