- 1 pound turkey bacon
- 1 pound chicken thighs
- 2 cups bell peppers, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 2 cups rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a crockpot, add the turkey bacon, chicken thighs, diced bell peppers, chopped onion, and minced garlic.
- Pour in the diced tomatoes and chicken broth.
- Add the rice, Cajun seasoning, salt, and black pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, stir and check for consistency; add more broth if needed.
