  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 2 cups corn, frozen or fresh
  • 1 cup diced potatoes
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a crockpot, add the chicken breast and turkey bacon.
  2. Add the corn, potatoes, onion, and garlic.
  3. Pour in the chicken broth, then stir in thyme, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or until chicken is cooked through.
  5. Once the chicken is done, shred it with two forks, returning it to the pot.
  6. Add the heavy cream, stir well and let it cook for an additional 30 minutes.
