  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the zucchinis into fry shapes and set aside.
  3. In a bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. In another bowl, whisk the eggs and add olive oil.
