Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 2 cups fresh spinach
  • 1 tablespoon lime juice
  • to taste salt and pepper
  • 1 cup tortilla strips
  • 1/2 cup shredded cheese (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Stir in the cumin and chili powder, and cook for another minute until fragrant.
  3. Add the vegetable broth, diced tomatoes, black beans, corn, and bell pepper. Bring to a simmer.
  4. Add the spinach and lime juice, and season with salt and pepper. Let simmer for 5 more minutes.
  5. Serve hot, topped with tortilla strips and cheese if desired.

Notes

  • This soup can be customized with your favorite vegetables.
  • For a spicier version, add jalapeños or hot sauce.
