- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 2 cups fresh spinach
- 1 tablespoon lime juice
- to taste salt and pepper
- 1 cup tortilla strips
- 1/2 cup shredded cheese (optional)
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Stir in the cumin and chili powder, and cook for another minute until fragrant.
- Add the vegetable broth, diced tomatoes, black beans, corn, and bell pepper. Bring to a simmer.
- Add the spinach and lime juice, and season with salt and pepper. Let simmer for 5 more minutes.
- Serve hot, topped with tortilla strips and cheese if desired.
