  • 8 ounces turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot, cooking until the onion is translucent.
  3. Stir in the mushrooms and cook until softened.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Blend the soup until smooth, then return to heat.
  6. Add the heavy cream, thyme, and parsley. Season with salt and pepper.
  7. Chop the turkey bacon and stir it back into the soup. Serve warm.
