  • 1 pound boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup wild rice
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in minced garlic and sliced mushrooms, cooking until mushrooms are browned.
  4. Add the chicken thighs, cooking until no longer pink.
  5. Pour in chicken broth and add wild rice.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes, or until rice is tender.
  7. Stir in heavy cream and thyme, and season with salt and pepper.
