A delicious and creamy pasta salad inspired by the flavors of Mexican street corn, enhanced with crispy turkey bacon.

Ingredients

  • 8 ounces pasta of your choice
  • 1 cup corn, grilled or canned
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 cup cilantro, chopped
  • 4 strips turkey bacon, cooked and crumbled

Instructions

  1. Cook the pasta according to package instructions; drain and cool.
  2. In a large bowl, combine the corn, cherry tomatoes, red onion, mayonnaise, sour cream, lime juice, chili powder, and cumin.
  3. Add the cooled pasta and mix until well combined.
  4. Fold in the cilantro and crumbled turkey bacon.
  5. Chill in the refrigerator for at least 30 minutes before serving.
