  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 cup green enchilada sauce
  • 1 cup heavy cream
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese, for topping

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until softened.
  2. Stir in chicken broth, shredded chicken, enchilada sauce, heavy cream, corn, and cumin.
