  • 1 cup dried chickpeas
  • 1 pound chicken breast, diced
  • 1 cup white rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, sauté until softened.
  2. Add garlic and cook for 1 minute.
  3. Stir in chicken and cook until no longer pink.
  4. Add chickpeas, rice, broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, until rice is tender.
  6. Stir in heavy cream and heat through.
  7. Serve hot.
