  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots, and sauté until softened.
  2. Add minced garlic and thyme, and cook for another minute.
  3. Stir in chicken broth and bring to a boil.
  4. Add wild rice and chicken breasts. Reduce heat and simmer until chicken and rice are cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in heavy cream and season with salt and black pepper. Serve hot.
