These Cranberry Crumble Bars are the perfect blend of tart cranberry and sweet crumble, making them an indulgent treat suitable for any occasion.

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup butter, softened
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a saucepan, combine cranberries, sugar, and vanilla over medium heat, and cook until the cranberries burst.
  3. In a bowl, mix flour, oats, baking soda, and salt.
  4. In another bowl, cream butter with the flour mixture until crumbly.
  5. Press half of the mixture into the bottom of the prepared baking dish.
  6. Spread the cranberry mixture over the crust.
  7. Top with the remaining crumble mix and bake for 30-35 minutes until golden brown.
  8. Let cool before slicing into bars.

Notes

  • For a sweeter raspberry filling, add extra sugar as desired.
  • Serve with a dollop of whipped cream for added indulgence.
