A hearty Cowboy Soup featuring turkey bacon and chicken ham for a delicious twist.

Ingredients

  • 1 pound turkey bacon
  • 2 cups chicken ham, diced
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups bell peppers, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add chopped onion and garlic to the pot and sauté until softened.
  3. Stir in bell peppers, black beans, corn, and diced tomatoes.
  4. Pour in chicken broth and add spices. Bring to a boil.
  5. Reduce heat and simmer for about 20 minutes.
  6. Return crumbled turkey bacon to the pot and cook for an additional 5 minutes.

Notes

  • This soup can be easily customized with your favorite vegetables.
  • For a spicier kick, add jalapeños or hot sauce to taste.
