- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cans (28 ounces each) crushed tomatoes
- 2 cups vegetable broth
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.
- Add minced garlic and sauté for an additional minute.
- Stir in crushed tomatoes, vegetable broth, sugar, salt, black pepper, and dried basil. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Blend the soup until smooth, then return to heat. Stir in heavy cream and fresh basil, and cook for another 5 minutes.
- Serve warm, garnished with additional basil if desired.
