  • 1 pound chicken thighs
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped carrots and celery, and sauté for about 5 minutes.
  3. Add in the diced potatoes, chicken thighs, and chicken broth.
  4. Season with salt, pepper, and thyme.
  5. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  6. Remove chicken, shred it, and return it to the pot.
  7. Simmer for an additional 10 minutes until potatoes are tender.
  8. Serve warm.
