  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 3 packages (8 oz) cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup cocoa powder
  • 4 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the chocolate cookie crumbs and melted butter. Press firmly into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix well.
  4. Mix in sour cream and cocoa powder until fully combined.
  5. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Pour the cheesecake mixture over the crust.
  7. Bake for 50-60 minutes until set. The center may still be slightly wobbly.
  8. Turn off the oven and let the cheesecake cool inside for an hour.
  9. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For best results, use room temperature cream cheese to avoid lumps.
  • Top with chocolate ganache or whipped cream for added indulgence.
