These Chocolate Caramel Oatmeal Cookie Bars are a delicious blend of rich chocolate and creamy caramel, topped with a crumbly oatmeal topping.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 2 cups caramel bits

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  3. Add oats, flour, baking soda, and salt; mix until combined.
  4. Spread half of the mixture into the bottom of the prepared baking dish.
  5. Sprinkle chocolate chips and caramel bits over the crust, then crumble the remaining oatmeal mixture on top.
  6. Bake for 25-30 minutes, or until golden brown.
  7. Let cool before cutting into bars.
