Ingredients

  • 2 boneless chicken breasts
  • 1 ripe avocado
  • 2 slices of pepper jack cheese
  • 2 tablespoons chipotle sauce
  • 4 slices of sourdough bread
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper, then grill for 6-7 minutes on each side until fully cooked.
  3. While the chicken is resting, mash the avocado in a bowl and mix with chipotle sauce.
  4. Assemble the sandwich by spreading the avocado mixture on one side of the sourdough bread, placing the grilled chicken and cheese on top, then covering with another slice of bread.
  5. Brush the outside of the sandwich with olive oil and grill until golden brown, about 3-4 minutes per side.
