This comforting chicken vegetable soup is enhanced with turkey bacon for a delicious flavor boost.

Ingredients

  • 1 pound chicken, diced
  • 4 slices turkey bacon, chopped
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook chopped turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sautéing until onion is translucent.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in mixed vegetables and cook for a few minutes.
  5. Pour in the chicken broth and add thyme. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes. Season with salt and pepper to taste.
  7. Serve hot, garnished with crispy turkey bacon.

Notes

  • For extra flavor, add a bay leaf while simmering and remove before serving.
  • This soup can be stored in an airtight container in the refrigerator for up to 3 days.
