  • 1 pound chicken thighs
  • 4 cups chicken broth
  • 2 cups diced vegetables (carrots, celery, onions)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, combine chicken thighs and chicken broth.
  2. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Add diced vegetables, salt, black pepper, garlic, and parsley.
  4. Cook for an additional 20 minutes or until vegetables are tender.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Serve hot, garnished with extra parsley if desired.

Notes

  • For a richer flavor, use homemade chicken broth.
  • Leftover rotisserie chicken can be used for convenience.
