  • 1 cup diced onion
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 3 cups cooked shredded chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, carrots, and potatoes and sauté until soft.
  3. Stir in shredded chicken and cook for an additional 2 minutes.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat and stir in heavy cream, thyme, salt, and pepper.
  6. Simmer for 10 minutes until heated through.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a bay leaf while simmering.
