  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper, then coat with flour.
  2. In a skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat.
  3. Add the chicken and cook until browned, about 4-5 minutes per side. Remove and set aside.
  4. In the same skillet, add lemon juice, chicken broth, and capers. Bring to boil.
  5. Add the chicken back to the skillet, cooking for an additional 5 minutes.
  6. Remove from heat and stir in remaining butter and parsley.
  7. Serve warm with sauce drizzled over the top.

  • For extra flavor, marinate the chicken in lemon juice for 30 minutes before cooking.
