  • 1 cup cooked chicken, shredded
  • 3 slices turkey bacon, cooked and crumbled
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until soft.
  2. Add the mixed vegetables and cook for another 3-4 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the shredded chicken, crumbled turkey bacon, thyme, and black pepper. Reduce heat and let simmer for 20 minutes.
  5. Before serving, add lemon juice for a refreshing finish.
