  • 2 cups cooked shredded chicken
  • 1 can diced green chiles
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 cup sour cream
  • 1 can enchilada sauce
  • 8 tortillas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, green chiles, 1 cup of cheese, and sour cream.
  3. Spread some enchilada sauce on the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  6. Bake for 20-25 minutes until bubbly and golden.
