A delicious and simple recipe for cheesy chicken enchiladas that the entire family will love.

  • 1 cup shredded cheese
  • 1 can enchilada sauce
  • 8 tortillas
  • 1/2 cup sour cream
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken with half of the cheese and some enchilada sauce.
  3. Fill each tortilla with the chicken mixture, roll them up, and place them in a baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle the rest of the cheese.
  5. Drizzle with olive oil and bake for 20-25 minutes.
  6. Serve hot topped with sour cream.
