A delicious and comforting dish that combines cheesy goodness with the rich flavors of chicken enchiladas.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 1 cup black beans, drained
  • 1 cup corn, drained
  • 12 corn tortillas, cut into strips
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper.
  3. In a greased baking dish, layer half of the tortillas on the bottom.
  4. Spread half of the chicken mixture over the tortillas.
  5. Sprinkle half of the cheese on top.
  6. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.

Notes

  • For an extra kick, add diced jalapeños to the chicken mixture.
  • Serve with sour cream and guacamole for added flavor.
