A warm and comforting cheddar broccoli potato soup that’s perfect for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 large potatoes, diced
  • 4 cups vegetable broth
  • 2 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until onion is translucent.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Stir in the broccoli florets and cook until tender.
  4. Reduce heat and add cheese and milk. Stir until cheese is melted and soup is creamy.
  5. Season with salt and pepper to taste, and serve hot.

Notes

  • For a thicker soup, blend a portion of the soup and return it to the pot.
  • Feel free to add more vegetables based on your preference.
