A comforting and flavorful carrot soup recipe that’s simple to make.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cups carrots, peeled and sliced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup heavy cream (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and sauté until translucent.
  3. Stir in the carrots and cook for about 5 minutes.
  4. Add the vegetable broth, ginger, salt, and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes until carrots are tender.
  6. Use an immersion blender to puree the soup until smooth.
  7. If using, stir in heavy cream and heat through before serving.

Notes

  • For extra flavor, add garlic along with the onions.
  • Garnish with fresh herbs such as parsley or cilantro.
