A quick and comforting carrot soup recipe enriched with creamy textures and crispy turkey bacon.

  • 1 pound carrots, peeled and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  2. Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender.
  3. Blend the soup until smooth, then stir in the heavy cream.
  4. Season with salt and pepper, and top with crumbled turkey bacon before serving.

Notes

  • For a vegetarian version, skip the turkey bacon and add more vegetables.
  • Can be made ahead and reheated before serving.
