  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the vegetable oil, granulated sugar, brown sugar, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the grated carrots, crushed pineapple, and chopped walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
