A delicious blend of carrots and bananas make these muffins a healthy and easy treat that everyone will enjoy.

Ingredients

  • 1 cup grated carrots
  • 1 cup mashed bananas
  • 1/2 cup honey
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the honey, oil, and eggs.
  3. Stir in the grated carrots and mashed bananas.
  4. In another bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped nuts if using.
  7. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool before removing from the tin.

Notes

  • For added sweetness, you can sprinkle some brown sugar on top before baking.
