A creamy and flavorful Cajun potato soup enhanced with turkey bacon.

Ingredients

  • 4 cups potatoes, diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until soft.
  3. Add the potatoes and chicken broth; bring to a boil.
  4. Simmer until potatoes are tender.
  5. Stir in heavy cream and Cajun seasoning.
  6. Blend the soup until smooth, then return to heat.
  7. Season with salt and pepper, then serve topped with crispy turkey bacon.
