  • 2 cups butternut squash, peeled and diced
  • 2 cups fresh spinach
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add butternut squash and spinach, cooking until they are tender.
  4. In a bowl, mix ricotta cheese with oregano, salt, pepper, and nutmeg.
  5. In a baking dish, layer noodles, ricotta mixture, sautéed squash and spinach, and mozzarella.
  6. Repeat layers and top with remaining mozzarella and parmesan cheese.
  7. Bake for 30-35 minutes until cheese is bubbly and golden.

Notes

  • For added flavor, consider adding red pepper flakes to the vegetable mixture.
